Certainly Microsoft Flight Simulator X has 6dof. It's quite an experience- I've never tickled my flying fancy like this without flying real airplanes before. Get it (along with a fast computer and quality flight controls) get in, and go flying. The better the interface in addition to head-tracking, the fuller the immersion- so higher-end controls (I use the Saitek x52 Pro, which comes with an FSX demo version BTW) are worth it. Wiimote is the best tracking (IMO) available now in personal flight-simming, because it's fast and CPU/Graphics card friendly. There's just no such thing as too much graphics power, and no processing to spare, because the potential in the FSX software (in combination with evolving add-ons) is stupendous- can't be maxed out without phenomenal hardware.
If you really want to learn about flying, FSX is a rich and fun learning environment. Moving around and interacting in the virtual cockpits available there -especially the best and faithfully-rendered ones- is vivid, like flight simulation never was before head-tracking. I know that I find it so... and I'm an 8k-hour CFIIMEIG (in other words I fly a lot IRL). I've trained in FAA-certified Level-D simulators, and I'm highly impressed with the potential of FSX with good hardware running it, and good interfaces accessing it. This discovery has found me in awe of this dawning VR age. Everyday people are going to have unprecedented access to interactive learning in the near future (in all sorts of specialized fields) and I fully expect that it's going to change everything. Get inside FSX with FreeTrack, for a preview. Also, FSX is cheap and widely distributed. If you're into aviation already, get the "Deluxe" version for more missions/lessons and mission building- I wish I had done so initially. Enjoy!
